This October I was visiting in Phoenix, and my friend Barbara and I were talking food. She asked for a couple recipies, and so here they are - especially for Barbara, but for anyone else who might like them. Enjoy!
Tater Tot Casserole
This is my basic/standard recipe for busy weeks or when I need to take something to someone, cause its simple to prepare, and easy to have the ingredients on hand.
1 lb. hamburger
1 onion, chopped
1 C. celery, chopped
1 lg. bag of frozen tater tots (in Germany I use frozen French fries and they work just fine)
1 can each cream of mushroom soup and cream of chicken soup (you may substitute any 2 cans of cream soup of your choice)
¼ c. water
Put frozen tater tots on bottom of 9x13 baking dish. Brown the hamburger, onion and celery then spread over the tater tots. Mix together soups and water, spread over the top of the hamburger. Bake 350 for 50 minutes. Freezes well too.
Lasagna
Meat sauce: 1 lb. sausage, 1 clove mined garlic, 1 1 lb can tomatoes, 1 12 oz. can tomato paste, 1 T basil, 1 ½ t. salt .
Brown meal, spoon off grease, add remaining ingredients and simmer, uncovered for 30 mins. Stirring occasionally
Cook 1 box of Lasagna noodles (this also works with the noodles not requiring cooking)
Slice 16 oz mozzarella cheese
Layer in 9x 13 baking dish the noodles, sauce then cheese. Repeat layering. Bake 375 for 30 minutes.
