Well, this time I am posting an odd assortmeent of recipies which have been requested recently. If you don't find what you want here check earlier posts or ask me, I will, eventually get it posted. Enjoy
Cornbread Casserole
Brown1 ½ lbs hamburger and 1 onion. Add 1 can of Rotell Tomatoes and put into a 9x 13 casserole. Slice an 8 oz. pkg. of Mexican Velvetta and put on top of meat mixture.
Mix together 2 packages of Jiffy Corn Muffin Mix, 2 eggs, ½ cup of milk, 1 small can cream style corn and 1 8 oz. pkg. Colby-jack cheese. Pour corn bread on top of meat and cheese. Top with a little more cheese and bake 350 of 45-50 mins. or till brown.
Christmas Salad:
1 bunch letter – red leaf or romaine
1 cubed yellow apple and 1 cubed pear
3 oz. shredded parmesean cheese
¾ c. cashews
½ c. craisins
1 diced red onion
Dressing:
1/3 C sugar
¼ C. lemon juice
1 t. salt
½ C. oil
1 t. poppy seed
Fudge
8 oz. Choc chips or 8 oz Bakers semi sweet choc. Squares, chopped
½ c. marshmallow topping
½ c. nuts
¼ c. margarine
½ t. vanilla
1 ½ c. sugar
2/3 c. evaporated milk
Place choc., Marshmallow, nuts, butter, and vanilla in a bowl and set aside. In a 2 qt. saucepan combine sugar and milk. Cook and stir over medium heat until mixture comes to a full boil. Stirring constantly, cook 5 minutes. Pour sugar syrup over chocolate mixture and stir until chocolate is melted. Pour into a buttered 8x8 pan. Chill until firm.
Sugar cookies & butter cream frosting
2 c. flour
1 t. baking powder
½ t. salt.
½ c. margarine
1 c. sugar
1 T. milk
1 egg,
1 t. vanilla
Cream together Margerine and sugar. Add egg and milk and vanilla. Add dry ingredients to creamed mixture and blend well. Chill dough. Roll out small amount to about 1/8 inch thickness. Cut into shapes and bake 5-7 minutes at 375 degrees.
Frosting:
1/3 c. margarine
3 c. powdered sugar
dash salt
1 T. vanilla
½ t. almond extract
2 T. (approx.) milk
Cream marg. and sugar together, add dash salt, vanilla and almond. Slowly add milk to desired consistency
